Pearl barley with creme fraiche and chilli with pork
Recipe of the month.
Creamy and rich chilli with minced pork, where the rice has been swapped with pearl barley.

Ingredients
for 4
Chilli pork
100 g kidney beans
100 g black beans
½ dl flavourless oil
1 tsp whole cumin
1 tsp whole coriander seeds
1 cinnamon stick
3 cloves garlic
2-3 tsp chilli flakes (may also be served as an accompaniment)
2 onions
350 g minced pork, 10 %
2 tins chopped tomatoes
300 g pearl barley
Salt and freshly ground pepper
2 tbsp balsamic vinegar
40 g dark chocolate
Topping
4 dl creme fraiche
1 bunch fresh coriander

300 g pearl barley

Method:
Day before: Soak the beans in cold water overnight. If you use canned beans, use 400g in total and do not soak.
- Discard the water from the beans and put them in a saucepan, add water to cover and bring to boil. Boil the beans for 45 mins until tender, turn off the heat and allow the beans to soak in the boiling water.
- Heat the oil in a frying pan over a high heat. Crush the cumin and coriander seeds in a mortar and pestle and add to the saucepan together with the coriander stick, finely chopped garlic and chilli flakes. Allow the spices to fry for about 1-2 minutes and then reduce the heat.
- Add the chopped onions. Stir until translucent and clear, then turn up the heat. Add the minced meat and brown well while stirring. Season with salt and freshly ground pepper. Add the chopped tomatoes, cover and allow to simmer for approx. 30 mins.
- Rinse the pearl barley in cold water and put in a saucepan, add water to cover and a pinch of salt. Boil the pearl barley for approx. 30 mins until tender.
- Drain the water from the beans and add to chilli, stir well and allow to cook for another 10 mins.
- Season the chilli with salt, freshly ground pepper, balsamic vinegar and chopped chocolate. Mix well and serve with pearl barley, creme fraiche and chopped fresh coriander.
