Cabbage rolls:
400 g minced pork, 10%
1 onion
1 clove garlic
10 sprigs of fresh thyme
1 egg
2 tbsp fine rolled oats
Salt and freshly ground pepper
1 white cabbage, 16 large leaves + 100 g
¼ dl olive oil
Topping:
2 dl chicken or vegetable stock
1 unsprayed orange
30 g pistachio nuts
2 tbsp dried, unsprayed rose petals
5 bay leaves, fresh or dried
Salt and freshly ground pepper
¼ dl olive oil
Accompaniment
200 g rice, e.g. brown whole grain
Method
Put the pork in a bowl, and work in the salt for 1 minute.
Add the finely chopped onion, finely chopped garlic, thyme, egg, salt, pepper and rolled oats. Bind together for another 1-2 mins until well mixed. Put the mixture in the fridge for approx. ½ time.
Half fill a 4-5 litre saucepan with water and 2 tsp salt. Bring to boil.
Put the head of white cabbage into the boiling water for 1 minute. This way, it’s easier to remove the leaves in as whole pieces as possible.
Take the cabbage out of the water, remove the leaves and let them drain well on a tea towel.
Remove the pork from the fridge.
Finely shred 100g of the remaining white cabbage. Mix in a bowl with 1 tsp salt and crush slightly so that it releases some liquid. Squeeze the liquid out of the cabbage, add it to the meat mixture and stir well. Shape the meat mixture into 16 large rolls and wrap them in individual cabbage leaves like small rolls, sealed well at both ends.
Pour half the oil into an ovenproof dish and place the cabbage rolls so that the opening faces downwards.
Pour over the stock, orange juice, and finely grated zest, chopped pistachios, dried roses and bay leaves.
Season with salt and freshly ground pepper, drizzle with the rest of the olive oil. Place the dish in a preheated oven. Cook at 170 degrees for approx. 20 mins until the meat is cooked through and the cabbage rolls acquire a nice golden colour.
Take the cabbage rolls out of the oven and serve with boiled rice.
