A new version of the Danish ‘Pig Industry Quality Manual’ has just been published.
The Danish Agriculture & Food Council has just published an updated version of the ‘Pig Industry Quality Manual’.
This manual has proved very popular over the years and it provides an invaluable reference point (pp.150), describing all the quality procedures being operated throughout the Danish pig meat production chain – particularly in those areas affecting animal health and welfare, food safety and the environment.
The chapter headings are as follows:
- Primary production
- Transport & pre-slaughter treatment
- Cutting & boning
- Cross-functional controls
